Food Storage


I finally started a food storage, which is quite the feat in an apartment. Right now I have 25 lbs. of oats in my bedroom until I can figure out where to put it. I also am just collecting canned, and boxed stuff when it is on sale and putting some of it away. When I finally get around to cleaning out the storage and putting all the stuff in Caleb's closet in storage then I can finally use his closet for food. This will make it so much easier and I won't have to play Tetris with cans and boxes. I am trying to at least get six months worth of food storage so that my family won't starve incase something happens. When I was younger I thought food storage was just grains and beans, I never realized that you could have yummy stuff too. 

With the way the economy is right now, you can't be too careful about saving and having an extra supply of food. If something were to happen tomorrow, I wouldn't be able to keep my family alive for very long. 

Hopefully I won't ever have to actually use it in my lifetime but I would rather be prepared then not. With all the things that are happening in this world right now no one can afford not to be prepared.

Cooking from scratch

I am on a mission to become more domestic. I know scary, me cooking from scratch. Actually, I used to cook from scratch all the time. It wasn't until I was married that I had ever made brownies from a box or cookies from a roll. I didn't even know cookies came that way. I just assumed everyone pulled out the flour, eggs, sugar and other various ingredients. I made banana bread for the first time in years, I was worried but it turned out beautifully. There were a few stumbling blocks but I overcame them and made a yummy treat. Caleb was even excited about it and kept telling mommy how yummy it was. My next project will be home made bread, I am excited. I have never made it so this should be fun. 

Tim loves it when I cook from scratch, because I made it with my own bare hands. I also feel very accomplished because I did it and it didn't come from a box. Maybe I will make pancakes next week or muffins....... I am so excited.

Healthy food

I have decided that I am going to start cooking more healthy. I ate so healthy growing up because one we didn't have any money so we lived out of our garden and two my mother was always against fatty food. I also have decided to start cooking from scratch. I feel like all we eat sometimes is processed junk. YUCK!!!

As I am starting to think about having another baby, I figured no time like the present to start eating healthy, plus I want to get rid of those last few pregnancy pounds that won't come off. I also don't want my son to grow up thinking that the only good foods are the ones with all the preservatives. I am on a mission to throw out all the junk and never bring it back into my home. We eat too much red meat and we need to start putting more chicken and fish into our diets. I will keep you all posted on my progress and I will also post my recipes for the week.

The little things

As a teenager and a young adult one of my favorite places to go and ponder and think was up in the mountains. I would drive up there and just walk and sit and think for hours. I had no distractions and I loved it. Now the mountains are little farther and so I usually just go for a drive or go sit at a park and watch all the beauty around me. The last few weeks I have been really pondering my life and all that I have. After I lost my pregnancy I didn't think I would ever be able to look at things the same, and I was right. I see things with more beauty then I ever did. There is a tree right outside my window and there are birds that sing all morning. I never really noticed it before, the song they sing is so beautiful. Life is an amazing thing and all the things that go into making it. I will never walk out my door without looking at things different. I don't even look at my son the same. He was running around and the light hit his hair just right and it was the most beautiful thing the way the sun danced on his golden hair, and the movement was so graceful. I love to watch him just smile the pure joy in his face when he sees me or someone he loves. I am so lucky to have the pure innocence of a child around me everyday. The way he looks at things he has never seen before, the look of wonder and amazement. 
I had gotten to the point where I had forgotten about the little things. I will never take the little things for granted anymore.
